Lunch Toast #3: Roasted Red Peppers, Hummus, Sauerkraut, Balsamic Vinegar

This one rounds out the trifecta of lunch toast. All you need is a jar of roasted red peppers, a few tablespoons of hummus, a scoop of sauerkraut, and balsamic vinegar to drizzle on top. 

My favorite place for jarred roasted red peppers is Trader Joes. They have the best price at only $2.99 (as of the time of writing this) and there are typically two large red peppers stuffed inside. All I need for a single lunch portion is one of them, so I save the other red pepper for another lunch later in the week.

My favorite hummus is Costco's prepacked single serving hummus. I've written about this hummus before so check out that post for more detail. I haven't seen anything that competes with it as far as price, convenience, and flavor.

Then the topping combo of sauerkraut and balsamic vinegar packs a puckering punch but is so good. it's what makes this dish so craveable and keeps you coming back for another bite. It's like that first time trying a back of salt and vinegar potato chips where it seems over the top vinegary, but then your pallet settles down and is ready for more.

This combo is definitely worth trying.
