Thanksgiving Green Beans and Quinoa

I've been loving my Everything Bagel Seasoning Blistered Green Beans so much so that I wanted to make it as a side dish for Thanksgiving. I love green beans but am not the biggest fan of the traditional green bean casserole. It's just too mushy and tastes like everything in it came from a can (which it typically does).

I wanted to try something that featured fresh green beans but bulked up to serve as a stuffing substitute. Figured pairing this recipe with quinoa would work out well. I traded out the soy sauce for orange juice to better tie in the hint of orange in the cranberry sauce. This was a huge hit!

Ingredients

  • 1 pound green beans, trimmed
  • 1 cup quinoa
  • 2 cups vegetable or chicken broth (or water + bouillon)
  • 1/4 cup chopped green onion
  • 1/4 cup everything bagel seasoning
  • 1 tbsp sesame oil
  • 2 tbsp orange juice
  • 1 tbsp rice vinegar
  • 2 tbsp raw or brown sugar
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
