Pineapple Salsa Recipes

Chips and salsa is hands down my favorite food. I could eat it all day long. I remember as a kid I loved going to Mexican restaurants because of the endless chips and salsa. It was like having two meals. The strategy is you fill up on chips and salsa and then order something, have a few bites, and bring the rest home as another meal. It was like I was born thinking of ways to save money or stretch a dollar.

When at home, my go-to salsa is my Super Simple Salsa Recipe, but every now and then I love a fresh ingredient salsa and this pineapple salsa sure works. Pineapple is such an unexpected ingredient in a salsa but brings such a wonderful flavor dimension. And it is perfect to serve with thick chips that can handle the chunks of fresh ingredients. Or it pairs really well with grilled fish either in a taco or as a side. And you can even try it as a pizza topping if pineapple on pizza is your thing.

Here are two recipes that I love to make. Directions are pretty simple. Just dice everything up into the size chunks you want and mix in a bowl with the salt and lime juice.

Pineapple Salsa
  • 1 cup diced pineapple
  • 3/4 cup diced red pepper
  • 1/4 cup diced jalapeno (optional)
  • 1/4 cup diced red onion (soak in water for 5-10 minutes to remove some sharpness)
  • 2 tbsp chopped cilantro
  • 2 tbsp lime juice
  • 1/4 tsp kosher salt
Pineapple Salsa with Black Beans
  • Add to the recipe above:
  • 14oz can black beans drained a rinsed
  • 1/2 tsp cumin added to beans
  • 1 tsp Tajin seasoning
