This may sound like the strangest sandwich in the world but, believe it or not, it is incredible! There is something so satisfying about the addition of hummus and sauerkraut to avocado toast.
First the hummus provides a smooth, creamy texture that is missing from plain avocado toast.
Then the sauerkraut provides that sour, vinegar flavor that pairs so well with avocado. Think of it like lime juice but a way healthier, probiotic-enriched version that also happens to bulk up the meal.
I got the tip of combining sauerkraut with avocado from the movie star, Cameron Diaz, of all people. She shared the recipe for her probiotic bowl with Blue Zones.
You have to give this sandwich a shot. It can be made so quickly and easily at home or even in a workplace break room. This sandwich might just become your new lunch-time staple like it has for me.
Ingredients
- 2-3 slices of bread, toasted
- 1 avocado, halved and sliced
- 2 tablespoons hummus
- 1/4 cup sauerkraut, drained as much as possible
Directions
- Spread the hummus on the toast
- Add the sliced avocado
- Layer on the sauerkraut
- Serve open faced
