Lunch Toast #2: Tuna, Sauerkraut, Everything Bagel Seasoning

This combination of canned tuna, sauerkraut, and everything bagel seasoning may seem like the oddest combination ever, but let me tell you, it is fabulous. I enjoy it so much more than traditional tuna salad and it is a lot easier to prepare. The acidic bight of the sauerkraut combined with the poppy, sesame, garlic, onion flavor of the everything bagel seasoning transforms canned tuna into something elevated and craveable.

I prefer to use canned tune in oil, not water. Since this is a mayo free tuna recipe, that little bit of extra fat helps give body to the tuna. I drain the oil but the residue oil is just enough. I add the tuna to a bowl and then add about 1/4 cup of sauerkraut and 1-2 teaspoons of everything bagel seasoning. I mix it all up like a traditional tuna salad. Then I toast up some of my sourdough bread and spoon on tuna salad bite by bite.

Probably the best part of this tuna salad aside is the secret health benefits. Tuna is such a great fish loaded with nutrients including omega-3 fatty acids. Then adding in the sauerkraut adds a probiotic that contributes to gut health. The only downside is the potential mercury content in the tuna so I limit consumption to just one can and I don't have this more than two times per week.
